Black Tiger Prawns in Olive Oil with Garlic
Ingredients
- 2-4 Black Tiger prawns (shell-on, headless, or peeled)
- 7 tbsp extra virgin olive oil
- 1 tsp Havsnø sea salt flakes
- 2 garlic cloves, thinly sliced
- 1 tsp chili flakes or 1 small red chili, finely diced
- Juice of 1 lemon
- 1 baguette for serving
- Optional: fresh parsley & Chili Allrounder seasoning
Preparation
- Preheat the oven: Preheat the oven to 180°C (350°F) with top and bottom heat.
- Marinate the prawns: Wash the prawns, pat them dry, and briefly marinate them with lemon juice, salt, and chili flakes.
- Heat the oil: Pour the olive oil into an ovenproof dish, place it in the oven on a rack, and let it get really hot.
- Check the temperature: The oil is hot enough when small bubbles form as soon as the end of a wooden spoon is dipped into it (approx. 170°C).
- Cook the prawns: Add the garlic and marinated prawns to the hot oil. Leave in the oven for about 6–8 minutes until the garlic is lightly browned and the prawns are pink.
- Finish: Sprinkle with freshly picked parsley and a little Chili Allrounder seasoning.
- Serve: Serve directly from the hot dish – ideal with fresh bread for dipping into the aromatic garlic oil.
Tip: The dish also tastes excellent with peeled prawns or scampi. Best served fresh or thawed.
Extra tip: A glass of chilled white wine or sparkling Cava pairs perfectly with it.
