Ingredients
- 250 g brown lentils (Beluga lentils)
- 1 Frisée lettuce
- 1 handful of cherry tomatoes
- 1 small apple, cut into sticks
- A splash of lemon juice
For the dressing
- 4 tbsp Marc de Champagne vinegar
- 8 tbsp extra virgin olive oil
- 1 tsp red wine salt or sea salt flakes
- white ground pepper to taste
- 1 heaped tsp medium-hot mustard
- 1 onion, finely chopped
Preparation
- Cook the lentils: Cook the lentils in a little broth until al dente, following the package instructions.
- Prepare the dressing: Puree the onion, vinegar, mustard, salt, and pepper. Then slowly mix in the olive oil until a creamy dressing forms.
- Combine: Mix the still-warm lentils with the dressing.
- Arrange the salad: Distribute the frisée lettuce onto plates, drizzle the apple sticks with lemon juice, and add them along with the cherry tomatoes. Top with the lentil dressing.
Tip: The salad tastes especially aromatic when served lukewarm. If you prefer it more savory, you can add a little honey-mustard or fresh herbs.
Bon appétit!
