Yellow Bean Salad with Yogurt Dressing
Ingredients
- 500 g yellow beans, washed and trimmed
- 3–4 tbsp plain yogurt
- ½ bunch chives, finely chopped
- 1 medium white onion, finely chopped
- 1 tsp medium-hot mustard
- 3 tbsp Marc de Champagne vinegar
- 1 tbsp white wine vinegar
- 3 tbsp olive oil
- Red wine salt and ground white pepper
Preparation
- Cook the beans: Cook the beans in boiling salted water for 10–15 minutes until al dente. Drain and let cool slightly.
- Mix the dressing: Whisk together the yogurt, mustard, vinegars, olive oil, chives, and onion in a bowl. Season to taste with salt and pepper.
- Finish the salad: Halve or third the beans, add them to the dressing while still lukewarm, and mix carefully.
- Serve: This salad is delicious served warm or cold – ideal as a side dish or a light main course.
Tip: Especially tasty with toasted walnuts or a squeeze of lemon juice. In summer, refine with fresh mint; in winter, round off with a little garlic.
