Ingredients
- 200 g dried yellow or red lentils
- 1 can of chopped tomatoes (400 g)
- 2 organic lemons
- 1 large white onion
- 3–4 cloves of garlic
- 1 liter vegetable broth, preferably with seasoning paste
- 2 tbsp Extra Virgin Olive Oil Crete
- 1 tbsp tomato paste
- 1 tsp cumin
- 1 tsp sweet paprika
- ½ tsp turmeric
- 1 heaped tsp Chili Allrounder Seasoning
- Spanish Rock Salt to taste
- Organic Cracked Black Pepper, to taste
- Some fresh parsley or coriander
Preparation
- Prepare the ingredients: Juice one organic lemon. Wash the second lemon in hot water, cut it into thin slices, and remove the seeds if necessary. Finely dice the onion and chop the garlic. Rinse the lentils thoroughly.
- Sauté the onion and garlic: Heat the extra virgin olive oil in a large pot. Sauté the onion in it for about 3–4 minutes until translucent. Add the garlic and cook briefly.
- Toast the tomato paste: Add the tomato paste to the pot and toast briefly while stirring until it releases its full aroma.
- Release the flavors of the spices: Add the cumin, paprika, turmeric, and Chili Allrounder Seasoning. Toast everything briefly over low heat.
- Add the lentils and tomatoes: Briefly stir in the rinsed lentils. Then add the chopped tomatoes and the vegetable broth. Mix everything thoroughly.
- Simmer the soup: Bring the soup to a boil once, then simmer over medium to low heat for about 20–25 minutes until the lentils are nice and tender. Stir occasionally. Add a little more broth if needed.
- Finish with lemon: Stir in the freshly squeezed lemon juice only at the end. Season the soup with Spanish rock salt and cracked organic black pepper. If you like it particularly creamy, blend part of the soup directly in the pot.
- Serve and enjoy: Ladle the hot lentil soup into bowls, garnish with thin organic lemon slices, and sprinkle with freshly chopped parsley or coriander as desired. Serve immediately and enjoy.
Our tips for enjoying it even more:
- Fresh and lemony: Add the lemon juice only at the end. This preserves the fresh citrus note particularly well.
- Enjoy the lemon slices too: The thin organic lemon slices are not just for decoration. Add them directly to the soup and enjoy them spoonful by spoonful. This adds a wonderfully fresh note to every bite.
- Extra creamy: For a velvety consistency, simply blend part of the soup and stir it back in.
- Optional: It also pairs well with Crispy Chicken for a non-vegan version (see photo)
- Ideal for preparing in advance: The lentil soup also tastes wonderful the next day. When reheating, add a little water or vegetable broth as needed, as the lentils will have thickened.
Enjoy your meal and have fun savoring this warming lentil soup!
