Ingredients
- 4 slices of toasted bread or crispbread
- 1-2 large, ripe tomatoes
- 1 medium white onion
- 200 g cottage cheese
- Fresh parsley or chives, to taste
- 3–4 tbsp LIBÈA Extra Virgin Olive Oil from Sicily
- Havsnø Sea Salt Flakes to taste

Preparation
- Prepare the vegetables: Wash the tomatoes and cut them into small cubes. Peel the white onion and finely dice it as well.
- Add the herbs: Wash the parsley or chives, chop them finely and mix them with the tomatoes and onion.
- Fold in the cottage cheese: Add the cottage cheese to the tomato-onion mixture and stir in gently.
- Assemble: Spread the creamy tomato-cottage cheese mixture generously over the crispbread or freshly toasted bread.
- Finish: Sprinkle with Havsnø Sea Salt Flakes and cracked black pepper. Drizzle with LIBÈA olive oil.
