Snow of the sea

On the Norwegian Atlantic island of Gossa, an exceptionally fine sea salt is created in a small family manufactory. There, Michal Christina Øverland uses old traditions to harvest delicate salt flakes from the clear, cold water of the North Sea – hand-harvested and completely natural.

She calls her salt Havsnø, Norwegian for "snow of the sea." The name suits the fine, bright crystals, which resemble snowflakes, offer a light crunch, and then melt on the tongue.

In terms of taste, Havsnø is clear and robust, yet pleasantly rounded and without any bitter aftertaste. Its fine structure makes it particularly suitable as a finishing salt: sprinkled over the finished dish just before serving, it provides a precise salty accent while its unique texture remains perceptible.
